The Green Tea Gelatin That Earned a Permanent Spot in My Fridge

I first made this because I wanted a clean, antioxidant-rich habit to start the day that was not another sugary latte pretending to be wellness.

The goal was simple: build a recipe with whole green tea antioxidants (EGCG), a firm texture and enough rich flavor that it felt like a reward rather than a chore. The natural green color came from pure ceremonial-grade green tea extract.

That distinction matters. Green tea contains rich polyphenols, catechins and L-theanine that support cellular metabolic balance. When combined with pure collagen-derived gelatin, it provides sustained amino acids (glycine and proline) with zero blood sugar spikes.

THE WORKING RECIPE

The Cold-Set Green Tea Batch

Clean flavor. Natural botanical infusion. No artificial coloring required.

What you need

  • 1½ cups brewed pure green tea (cool or room temperature)
  • ½ cup pure coconut water or filtered spring water
  • 2 tbsp unflavored grass-fed gelatin
  • 1 tsp premium matcha or green tea powder
  • ½ tsp pure vanilla bean extract
  • 1 pinch Himalayan pink salt
  • Optional: a touch of raw organic honey or stevia

How to make it

  1. Pour ½ cup cold green tea into a bowl. Sprinkle gelatin evenly over the surface and let it bloom for 5 minutes.
  2. Heat the remaining cup of green tea until hot and steaming (around 175°F / 80°C to preserve catechins). Whisk into the bloomed gelatin until dissolved.
  3. Stir in coconut water, vanilla, salt and whisk in the green tea matcha powder until smooth.
  4. Pour into a glass dish. Refrigerate for 3–4 hours until firm, then slice into ready-to-enjoy squares.

Avoid using violently boiling water on green tea powder, as excessive heat can scorch delicate catechins and diminish its natural antioxidant profile.
